Higher Protein Egg Salad
This mayo-free egg salad is a staple recipe over here, with hundreds of raving reviews. If you haven’t tried it yet, do yourself a favor and prep this one for the week. The box grater egg hack gives the eggs the best texture!

Ingredients
8 hard boiled eggs
1 1/2 cups cottage cheese (I use Good Culture)
2 tbsp Dijon mustard
juice from 1 lemon
1 tsp smoked paprika
1/4 cup chives (chopped)
salt & pepper to taste
Instructions
Directly grate hard-boiled eggs into a large bowl using a box grater.
Add in the remaining ingredients and mix well.
Enjoy!
