Three Meal-Prep Friendly Recipes

Higher Protein Egg Salad

This mayo-free egg salad is a staple recipe over here, with hundreds of raving reviews. If you haven’t tried it yet, do yourself a favor and prep this one for the week. The box grater egg hack gives the eggs the best texture!

Prep time: 10 minutes

Cooking time: 0 minutes

Total time: 10 minutes

Servings: 5-7

Notes: high-protein, low-carb, lasts in fridge up to 5 days.

Ingredients

  • 8 hard boiled eggs

  • 1 1/2 cups cottage cheese (I use Good Culture)

  • 2 tbsp Dijon mustard

  • juice from 1 lemon

  • 1 tsp smoked paprika

  • 1/4 cup chives (chopped)

  • salt & pepper to taste

Instructions

  1. Directly grate hard-boiled eggs into a large bowl using a box grater.

  2. Add in the remaining ingredients and mix well.

  3. Enjoy!
