Rainbow Salmon Bowls
Get ready to crunch your way through summer with this vibrant salad! It’s bursting with fresh veggies and a playful mix of textures that make every bite delicious. Plus, the juicy mango adds a sweet twist you’ll be craving all season long!

Notes: high-protein, low-carb, lasts in fridge up to 5 days (without the salmon).
Ingredients
6 Persian cucumbers
2 red bell pepper
1 green bell pepper
1 small red onion
1 mango
2 salmon filets
Dressing:
1/4 cup extra virgin olive oil
juice from one lime
3 tablespoons of honey
salt & pepper to taste
Instructions
Rinse and pat salmon dry, then season with salt and pepper. Air fry at 390 degrees Fahrenheit for 12-13 minutes.
Use a veggie chopper to chop all veggies and add to a large bowl.
Cut the mango into small pieces and add to the bowl.
Add dressing ingredients to separate small bowl and mix. Pour the mixture over the salad.
Serve and top with salmon.
