Traveling for work this month has made me appreciate being home even more. I'm incredibly grateful for the opportunity to travel and meet amazing brands that are aligned with my same mission and values as me, but I also love the comfort of being home and having a routine. With so much going on these days, I feel like I'm constantly trying to keep up! I'm sure many of you can relate. Luca started preschool this week – where has the time gone? – Now, I have a little more time to brainstorm content and recipes for fall.
Don’t worry though, my meal prep recipes are still in summer mode at least for another week or two! This week's delicious zucchini “quiche” is such a fun lighter spin on a quiche and I've been making it over and over because it's so easy and packed with vegetables and protein. But I'm also starting to sneak in a WEEE bit of fall with this weeks banana bread baked oats and easy sheet pan dinners! Three Meal-Prep Friendly Recipes

Chocolate Chip Banana Bread Baked Oats

A wholesome breakfast that can be prepped ahead and will make your house smell incredible!

Prep time: 5 minutes

Cooking time: 35 minutes

Total time: 40 minutes

Servings: 4-6

Notes: Pairs nicely with Greek yogurt and cinnamon on top!

Ingredients

  • 3 ripe bananas

  • 2 eggs

  • 3/4 cup Greek yogurt

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 2 cups old fashion rolled oats

  • 1 tbsp cocoa powder

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp of cinnamon

  • pinch of salt

  • chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. In a 9x9-inch baking pan, mash three ripe bananas until smooth.

  3. Crack in the eggs and all wet ingredients. Mix until well combined.

  4. Stir in the oats, cocoa powder, baking powder, baking soda, cinnamon, and salt. Mix until everything is fully incorporated.

  5. Fold in your desired amount of chocolate chips.

  6. Bake in the oven for 35 minutes or until the center has set.

  7. Serve warm with a dollop of your favorite Greek yogurt and a sprinkle of cinnamon.

Cheesy Zucchini “Quiche”

Another fantastic recipe to make use of those summer zucchini! Growing up I loved a good quiche, but being gluten-free I’ve really been missing out on them. I decided to make a similar version of a quiche by using a tortilla instead of pastry dough. It is packed with protein and fiber and makes a great make-ahead breakfast!
