Three Meal-Prep Friendly Recipes
Sheet Pan PB&J Protein Pancakes
This recipe came to me on a girl's trip to Joshua Tree last year. My girlfriends were all hungover and asked me to make breakfast. Of course, I was delighted to do so and got straight to work. I wanted to create something that could be easily shared, and I liked the idea of making pancakes. We had pancake mix and no oil, so I used eggs and Greek yogurt instead and threw the batter on a sheet pan with some toppings. And voila, my sheet pan protein pancakes were born!

Cooking time: 15-17 minutes
Total time: 25 minutes
Servings: 10-12

Ingredients
1 box pancake mix (I use Simple Mills or Trader Joe’s Gluten-Free)
1 cup Greek yogurt
1 cup water
2 eggs
natural peanut butter
strawberry jam
sliced strawberries
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Ignore the pancake mix box instructions and follow the steps below instead.
In a large bowl, combine the pancake mix, Greek yogurt, water, and eggs. Stir until the mixture is smooth and well combined.
Pour the mixture into an well oiled sheet pan (15 x 11 inches), spreading it evenly.
Dollop the desired amount of peanut butter and jam onto the mixture. With the back of your spoon, swirl the peanut butter and jam into the batter.
Place sliced strawberries on top and throw the sheet pan in the oven for 15-17 minutes, or until just golden on the top and the middle has set.
Wait 10 minutes to cool. Slice into squares and serve alone, with maple syrup, or yogurt/cottage cheese!
