Three Meal-Prep Friendly Recipes

Sheet Pan Chicken Sausage & Roasted Veggies With Dijon Garlic Sauce

This might be my new favorite sheet pan dinner! Not only is it beyond easy to throw together, but the sauce is just magical! I use this sauce for some of my salad recipes, but it’s SO perfect with this fall-inspired sheet pan dish!

Prep time: 10 minutes

Cooking time: 20-25 minutes

Total time: 35 minutes

Servings: 3-4

Notes: High Protein, Sheet Pan Meal, Leftovers store in the fridge for up to 4 days.

Ingredients

  • 1 Japanese sweet potato (cubed)

  • 1 white onion (sliced)

  • 1 package of chicken sausage (sliced)

  • 1 package of broccoli florets

Dijon garlic sauce

  • 2 tbsps olive oil

  • 2 tbsps soy sauce (or coconut aminos)

  • 2 tbsps Dijon mustard

  • 1/2 tsp garlic powder

  • pinch of salt

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.

  2. Start by preparing your vegetables and sausage. Slice the onion, cut the sausage into 1/2-inch thick slices, and cube the sweet potato.

  3. Line a baking sheet with parchment paper. Arrange the cubed sweet potato, sliced onion, sausage, and broccoli florets evenly on the sheet.

  4. Spray vegetables and sausage with avocado oil, then sprinkle salt and pepper. Toss to coat.

  5. In a bowl, whisk together the olive oil, soy sauce (or coconut aminos), Dijon mustard, garlic powder, and salt until well combined.

  6. Pour half of the sauce over the meat and vegetables, and toss again to coat everything evenly.

  7. Place the baking sheet in the oven for 20-25 minutes, until the sweet potatoes have softened and the sausage has browned.

  8. Remove from the oven and drizzle the remaining sauce over the roasted sausage and vegetables.
