Big Mac Casserole
Imagine enjoying the classic flavors of a Big Mac in a healthier, nourishing way that can feed the whole family! Or, if you're meal prepping for yourself, it’s a fantastic option for the week ahead. Introducing the Big Mac Casserole! It’s packed with big burger flavors and crispy potatoes. It’s like having burgers and fries for dinner—only better for you!

Ingredients
1 lb yellow baby potatoes
1 lb ground beef
1 cup shredded cheddar cheese
1/2 cup dill pickles (chopped)
1 yellow bell pepper (diced)
1 roma tomato (diced)
1 white onion (diced)
2 tbsp Worcestershire sauce
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
big mac special sauce (you can make your own, but I love this one and usually buy it at Whole Foods or Amazon)
romaine lettuce
white sesame seeds
Instructions
Preheat oven to 425 degrees Fahrenheit.
Cut potatoes into bite-sized pieces and add to a large casserole or baking dish. Drizzle generously with olive oil, and season with salt, pepper, and smoked paprika. Toss to coat evenly, then bake for 30 minutes, or until potatoes golden brown and crispy.
While the potatoes are baking, dice the yellow bell pepper and half of the onion. Heat 1 teaspoon of oil in a large skillet over medium heat. Sauté the bell pepper and onion for 2-3 minutes, then add the ground beef.
Stir in Worcestershire sauce, garlic powder, paprika, onion powder, salt, and pepper. Break up the meat and cook a few minutes, or until just cooked through.
Once potatoes are golden, remove them from the oven. Spread the cooked beef evenly over the potatoes, then sprinkle cheddar cheese on top. Return to the oven and bake for an additional 5 minutes, or until cheese is melted.
Remove the casserole from the oven. Sprinkle with sesame seeds, top with raw white onion and sliced pickles, and a drizzle of special sauce.
Serve over chopped romaine lettuce.
