Cajun Sausage & Cauliflower Rice Skillet
I’ve been testing out several new high-protein, low-carb dinners, and this one turned out absolutely amazing! It's packed with Cajun flavor, has a nice kick of spice, and is perfect for meal prep.
Prep time: 5 minutes
Cooking time: 25 minutes
Total time: 30 minutes
Servings: 5-7
Notes: Low Carb, High Protein, Meal Prep, Gluten Free, Dairy Free. Enjoy for up to 3 days in the fridge.
Ingredients
2 packs cajun chicken sausage (sliced) - I love the one from the brand Bilinksi’s
6 cups frozen riced cauliflower
1/2 cup white onion (chopped)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
1/4 cup green onion (chopped)
1 + 1/2 tbsp cajun seasoning
2 tbsp olive oil
salt, to taste
Instructions
Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for about 10 minutes, or until browned and cooked through. Remove the sausage from the pan and set aside.
To the same pan, add the onion, bell peppers, and cajun seasoning and sauté for 2 to 4 minutes, until soften.
Add the cauliflower rice, stirring well to combine. Cook for 5-10 minutes until the cauliflower softens, stirring occasionally. (Note: do not cover pan, as this can make the cauliflower mushy.)
Return the sausages back to the pan, toss to combine, and cook for another minute. Season with salt to taste.
Remove from heat, stir in the chopped green onions, and serve.
