Three Meal-Prep Friendly Recipes

Springy Beet Salad With Citrus Vinaigrette

One of my favorite salads! It's packed with nutritious ingredients and makes for a great meal prep option for the week. So much FLAVOR!

Prep time: 25 minutes

Cooking time: 0 minutes

Total time: 25 minutes

Servings: 5-7

Notes: High Fiber, Meal Prep, Gluten Free, Dairy Free. Enjoy in fridge for up to 4 days.

Ingredients

  • 4 cups cooked beets (you can roast your own or buy precooked)

  • 2 cups pre-shredded carrots

  • handful of cilantro (chopped)

  • 1 cup roasted sunflower seeds

Citrus Vinaigrette

  • 1 shallot (finely minced)

  • 1 lemon juiced

  • 1 orange juiced

  • 1 tbsp honey

  • 1/2 tsp Dijon mustard

  • 3 tbsp olive oil

  • salt & pepper, to taste

Instructions

  1. In a mixing bowl, whisk together the shallot, lemon juice, orange juice, olive oil, honey, Dijon mustard, salt and pepper. Let the mixture sit, allowing the flavors to develop as you make the salad.

  2. Meanwhile, using a box grater, grate the beets into a large bowl and add in the shredded carrots, cilantro, and sunflower seeds.

  3. Drizzle the dressing over the salad and toss gently until evenly coated. Add salt and pepper to taste. Serve and enjoy!
