BONUS POST- All about Cottage Cheese Ice Cream - All of my creations!
Dare I say, my claim to fame??
A couple of years ago, I felt like all we could talk about was cottage cheese. I mean still, to this day, its all the rage. There were and are so many ways to incorporate it, but last year it just felt like nothing new and exciting was out there.
It dawned on me a little over a year ago how to use cottage cheese in a way that is not only exciting but also sweet and delicious! I got the idea in the middle of the night. I woke up my husband to tell him about what I thought at the time was a huge discovery. He looked at me and said, “What are you talking about? Go to sleep.” LOL.
I fell back asleep, but three hours later, I dreamt it and woke up again thinking about it. So that’s when I knew I had to get up, still in the middle of the night, and attempt to make it. It turns out I was right. Cottage cheese ice cream was going to be a delicious game-changer. I filmed it immediately the next day and it took the world by storm.
The next day, I filmed and posted it, and so many of you loved it. A week later, I was featured on Good Morning America and the Wall Street Journal! So, in light of starting here on Substack, I wanted to share all the tips and tricks with you!
Here are my five favorite cottage cheese ice cream recipes that everyone should try!
Cookies & Cream
Ingredients
1 container of whole milk cottage cheese (I use Good Culture)
1/4 cup or more sweetener of your choice (I used raw honey here)
3-4 gluten-free Oreos
1/4 cup white chocolate chips (I love Lily’s)
Instruction
Using a high powered blender, food processor, or immersion blender, add cottage cheese and the sweetener of your choice and blend until it’s silky smooth.
Add in crushed Oreos and chocolate chips.
Make swirls using spoon and place it back into the container.
Freeze for just a few hours. (Pro Tip: Stir every hour or so while in freezer and don’t freeze longer than 4-5 hours).
Top with more crushed Oreos and enjoy!
Strawberry Cheesecake
Ingredients
1 container of whole milk cottage cheese
1/4 cup or more of sweetener of your choice (I used maple syrup here)
6-8 strawberries (chopped)
a few graham crackers (I like Simple Mills)
Instruction
Using a high powered blender, food processor, or immersion blender, add cottage cheese, the sweetener of your choice, strawberries and blend until it’s silky smooth.
Add in more strawberries, and crushed graham crackers.
Make swirls using a spoon and place back into container.
Freeze for just a few hours. (Pro Tip: Stir every hour or so while in freezer and don’t freeze longer than 4-5 hours).
Top with more crushed graham crackers and enjoy!
Peanut Butter Cheesecake
Ingredients
1 container of whole milk cottage cheese
1/4 cup or more sweetener of your choice (I used date syrup this time)
1-2 tbsp of natural peanut butter
1/2 cup chocolate chips
Instruction
Using a high powered blender, food processor, or immersion blender, add cottage cheese and the sweetener of your choice and blend until it’s silky smooth.
Add in peanut butter and chocolate chips.
Make swirls using a spoon and place back into container.
Freeze for just a few hours. (Pro Tip: Stir every hour or so while in freezer and don’t freeze longer than 4-5 hours).
Top with more peanut butter and chocolate chips and enjoy!
Pistachio
Ingredients
1 container of whole milk cottage cheese
1/4 cup or more sweetener of your choice
1/2 cup roasted unsalted pistachios
Instruction
Using a high powered blender, food processor, or immersion blender, add cottage cheese and the sweetener of your choice and blend until it’s silky smooth.
Add in pistachios.
Make swirls using a spoon and place back into container.
Freeze for just a few hours. (Pro Tip: Stir every hour or so while in freezer and don’t freeze longer than 4-5 hours).
Top with more pistachios and enjoy!
White Chocolate Pumpkin Cheesecake
Ingredients
1 container of whole milk cottage cheese
1/4 cup pure maple syrup
2-3 tbsp pumpkin purée
1 tbsp pumpkin pie spice
a few crushed up graham crackers
white chocolate chips (I used Lily’s)
Instruction
Using a high powered blender, food processor, or immersion blender, add cottage cheese, sweetener of your choice, pumpkin purée, pumpkin pie spice and blend until it’s silky smooth.
Add in crushed graham crackers and white chocolate chips.
Make swirls using a spoon and place back into container.
Freeze for just a few hours. (Pro Tip: Stir every hour or so while in freezer and don’t freeze longer than 4-5 hours).
Top with more crushed graham cracker and white chocolate chips and enjoy!
