Summer is still in full swing, my kids are at camp, and the days still feel long, which means I have a little more time to stock my kitchen with all of my favorite sweet treats. Whether I’m craving something chocolatey, something refreshing, or just a little afternoon pick-me-up, these are the recipes I’ve been reaching for again and again.

Some of these recipes have been staples in my kitchen for years, while others are newer discoveries that quickly became favorites. I’ve been making these Protein Klondike Bars every summer for as long as I can remember, and my Perdi’s Chocolate Pudding is the dessert I genuinely look forward to every single night (I always end up making one for my husband, too!). The rest have earned a permanent spot in my fridge, freezer, or pantry, and I hope they find their way into your kitchen this summer, too!

Date Reese’s Cups

I love recreating classic desserts using simple, wholesome ingredients I already have in my kitchen. These Date Cups are one of my favorites and are a healthier version of a Reese's cup, which has always been a family favorite. Inspired by my love for sweets and the desserts I grew up enjoying, this recipe is one I always keep on hand. Trust me, once you try them, you'll want a stash in your freezer at all times.

Prep time: 10 minutes

Freeze time: 20 minutes

Total time: 30 minutes

Servings: 24 cups

Ingredients

  • 24 Medjool dates

  • 3/4 cup nut butter of choice

  • 1 cup dark chocolate chips

  • 1 tbsp coconut oil

  • Flaky sea salt, optional

Instructions

  1. Remove the pits from the dates, then gently flatten each date into a silicone mini muffin liner.

  2. Drizzle each date with your favorite nut butter.

  3. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and fully melted. Spoon the melted chocolate over each date.

  4. Sprinkle with flaky sea salt, if desired.

  5. Freeze for 20 minutes, or until the chocolate is set. Enjoy straight from the freezer.

Perdi’s Chocolate Pudding

This is hands down one of my favorite desserts, although I may be a little biased since I created it! I love that Perdi’s comes together in seconds. And although it’s easy to make, I usually use multiple packets to make a large pudding that I keep prepped in the fridge. You can enjoy it as a rich, creamy chocolate pudding, or pop it in the microwave for a few seconds to transform it into warm, fudgy brownie batter. P.S. Click here to preorder our chocolate. We’ll be restocking next week!
