Three Meal-Prep Friendly Recipes
Air Fryer Steak Fajitas
This is a go-to weeknight dinner for my family. The cleanup is minimal, and I usually make it for dinner on Sunday or Monday, so there's extra for easy lunch meal prep the next few days!
Prep time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Servings: 4-5
Notes: High-protein, low-carb. Serve as is or with rice, cauliflower rice, or tortillas!
Ingredients
1 lb skirt steak or New York Strip
1 yellow onion
1 red bell pepper
2 green bell peppers
1 packet taco seasoning (I use Siete)
juice of 1 lime
cilantro (chopped)
2 tbsp olive or avocado oil
jalapeño sauce for drizzling (optional)
Instructions
Slice the vegetables and steak into strips, then place them in a large bowl.
Drizzle with avocado oil and sprinkle taco seasoning over the vegetables and steak, tossing to coat evenly.
Transfer to the air fryer and cook at 400 degrees Fahrenheit for 10-13 minutes, shaking occasionally.
Finish with a squeeze of lime juice, lime wedges, and freshly chopped cilantro.
Serve with a drizzle of jalapeño sauce. Enjoy!
