Jalapeño Popper Chicken Salad
This chicken salad offers all the delicious flavors of jalapeño poppers. It's creamy and features a satisfying crunch from the bacon topping, with a gentle spice from the sautéed jalapeños. So good!

Ingredients
4 cups chopped rotisserie chicken (white meat)
1 -2 jalapeños
1/4 cup Greek yogurt
3 tbsp cream cheese
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 cup chopped chives
1/2 tsp salt
1 tbsp olive oil
crispy bacon (for topping)
Instructions
Deseed and slice the jalapeño into bite-size pieces. (For extra heat, leave in some seeds.)
Heat olive oil in a skillet over medium heat. Sauté the jalapeños for 2-3 minutes, or until just softened. Add a pinch salt and cook for an additional minute.
In a large bowl, combine the yogurt, cream cheese chives, onion powder, garlic powder, and salt. Mix until smooth.
Add the chopped chicken and sautéed jalapeños to a bowl. Stir until everything is well combined.
Top with crispy bacon pieces. Serve and enjoy!
