Three Meal-Prep Friendly Recipes

Jalapeño Popper Chicken Salad

This chicken salad offers all the delicious flavors of jalapeño poppers. It's creamy and features a satisfying crunch from the bacon topping, with a gentle spice from the sautéed jalapeños. So good!

Prep time: 10 minutes

Cooking time: 5 minutes

Total time: 15 minutes

Servings: 4-5

Notes: High Protein, Low Carb. Store in the fridge for up to 4 days.

Ingredients

  • 4 cups chopped rotisserie chicken (white meat)

  • 1 -2 jalapeños

  • 1/4 cup Greek yogurt

  • 3 tbsp cream cheese

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 cup chopped chives

  • 1/2 tsp salt

  • 1 tbsp olive oil

  • crispy bacon (for topping)

Instructions

  1. Deseed and slice the jalapeño into bite-size pieces. (For extra heat, leave in some seeds.)

  2. Heat olive oil in a skillet over medium heat. Sauté the jalapeños for 2-3 minutes, or until just softened. Add a pinch salt and cook for an additional minute.

  3. In a large bowl, combine the yogurt, cream cheese chives, onion powder, garlic powder, and salt. Mix until smooth.

  4. Add the chopped chicken and sautéed jalapeños to a bowl. Stir until everything is well combined.

  5. Top with crispy bacon pieces. Serve and enjoy!

Spicy Chili Peanut Cucumber Salad

Higher in protein and packed with veggies, this cucumber salad is a great way to consume more veggies. The sauce is DRINKABLE and so easy to make in a blender, adding extra protein, fiber, and veggies to the dish. Enjoy it on its own or with grilled chicken. Perfection!
