Three Meal-Prep Friendly Recipes
McGriddle Bites
These have become a staple for me! They offer a sweet and savory punch, packed with protein, making them the perfect option to grab, reheat, and enjoy on busy mornings. Plus, they're a healthier twist on McDonald's McGriddles!
Prep time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
Servings: 12 regular muffin size or 24 mini muffins
Notes: Gluten Free, High Protein, Meal Prep Breakfast. Lasts up to 4 days in the fridge or freezer for 2 months.
Ingredients
1 lb breakfast sausage (cooked and broken up without casing, can use apple or maple chicken sausage as well)
2 cups pancake mix
1 cup egg whites
1 cup shredded cheddar cheese
maple syrup
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly coat a 12-cup muffin tin with oil and set aside.
In a large mixing bowl, combine the cooked sausage, protein pancake mix, egg whites, and shredded cheese. Stir until well combined.
Spray muffin tins with oil. Evenly divide the mixture among the muffin cups, filling each one about 3/4 full. Drizzle each one with a touch of maple syrup.
Place the muffin tin in the oven and bake for 20 minutes, or until the tops are golden and set. (If doing 24 mini muffins, bake for 15 minutes). Allow the bites to cool slightly before storing.
