Three Meal-Prep Friendly Recipes

McGriddle Bites

My new high-protein breakfast staple! They offer a perfect balance of sweet and savory flavors, with 8g of protein in each bite. My whole family can’t get enough of them!

Prep time: 5 minutes

Cooking time: 20 minutes

Total time: 25 minutes

Servings: 12

Notes: Lasts up to 4 days in the fridge or freeze for 2 months.

Ingredients

  • 1 lb breakfast sausage (cooked and broken up, can use chicken sausage as well without casing)

  • 2 cups protein pancake mix

  • 1 cup egg whites

  • 1 cup shredded cheddar cheese

  • maple syrup

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly coat a 12-cup muffin tin with oil and set aside.

  2. In a large mixing bowl, combine the cooked sausage, protein pancake mix, egg whites, and shredded cheese. Stir until well combined.

  3. Evenly divide the mixture among the 12 muffin cups, filling each one about 3/4 full. Drizzle each one with maple syrup.

  4. Place the muffin tin in the oven and bake for 20 minutes, or until the tops are golden and set. Allow the bites to cool slightly before serving.

Trader Joe’s Thai Peanut Lentils

While shopping this week, I came up with a new idea for a 3-ingredient recipe from Trader Joe's. It takes less than 10 minutes to prepare and is packed with protein and fiber to help keep you feeling full!
