Three Meal-Prep Friendly Recipes

Spicy Edamame Cucumber Salad

A summer meal-prep salad that PACKS in so much VEG, protein, and fiber. The sauce is spicy and a little sweet, making you WANT to come back for more!

Prep time: 10 minutes

Cooking time: 0 minutes

Total time: 10 minutes

Servings: 5-7

Notes: high-protein, plant-based, lasts in fridge up to 5 days.

Ingredients

  • 10 Persian cucumbers

  • 1 + 1/2 cups shelled edamame

  • 2 tbsps chili garlic sauce

  • 2 tbsps pure maple syrup

  • 1/2 tbsp rice vinegar

  • 2 + 1/2 tbsps tamari or soy sauce

  • 1 tbsp toasted sesame oil

  • salt & pepper to taste

garnish:

  • sliced green onion

  • white toasted sesame seeds

Instructions

  1. Cut cucumbers into a quarter of an inch thick slices. Cut each slice in half and add to a large mixing bowl.

  2. Add remaining ingredients into bowl and toss to combine. Add salt and pepper to taste.

  3. Top with green onions and white toasted sesame seeds.
