Spicy Edamame Cucumber Salad
A summer meal-prep salad that PACKS in so much VEG, protein, and fiber. The sauce is spicy and a little sweet, making you WANT to come back for more!

Notes: high-protein, plant-based, lasts in fridge up to 5 days.
Ingredients
10 Persian cucumbers
1 + 1/2 cups shelled edamame
2 tbsps chili garlic sauce
2 tbsps pure maple syrup
1/2 tbsp rice vinegar
2 + 1/2 tbsps tamari or soy sauce
1 tbsp toasted sesame oil
salt & pepper to taste
garnish:
sliced green onion
white toasted sesame seeds
Instructions
Cut cucumbers into a quarter of an inch thick slices. Cut each slice in half and add to a large mixing bowl.
Add remaining ingredients into bowl and toss to combine. Add salt and pepper to taste.
Top with green onions and white toasted sesame seeds.
