Three Meal-Prep Friendly Recipes

Trader Joe’s Hawaiian BBQ Chicken Meatball Skewers

Hitting you with a DELICIOUS Trader Joe’s meal with just 5 ingredients that packs in lots of flavor, veggies, protein, and all around summer vibes!

Prep time: 15 minutes

Cooking time: 10 minutes

Total time: 25 minutes

Servings: 5-7

Notes: high-protein, summer approved, lasts in fridge up to 4 days. Great served over white rice with extra of that bbq sauce on top.

Ingredients

  • 1 package TJ’s chicken meatballs

  • chopped pineapple chunks

  • TJ’s organic sriracha and roasted garlic bbq sauce

  • mini bell peppers

  • 1 red onion

  • bamboo skewers

Instructions

  1. Optional: Soak skewers in water for 10-15 minutes to prevent burning.

  2. Peel the red onion and slice into 1-inch pieces. Cut the mini bell peppers in half or quarters.

  3. Start by threading a few pepper and onion slices onto the skewer. Add chicken meatball on top of vegetables. Follow with a pineapple chunk. Repeat the sequence until you reach the top of the skewer, ending with a pineapple chunk.

  4. Heat a stovetop grill pan, large cast iron skillet, or outdoor grill to medium-high heat.

  5. Grill for 5-7 minutes on each side. Add a few tablespoons of barbecue sauce and keep basting with the sauce to get a nice brown glaze. Ensure the veggies are nicely charred. (Note: The meatballs come pre-cooked, so they require minimal cook time.)

  6. Enjoy the skewer as is, or serve over white rice. Generously drizzle extra barbecue sauce on top, allowing the rice to soak up some of that delicious sauce!

High Protein Broccoli Caesar Salad

This vegetarian protein and fiber-packed salad screams summer and is even better the next day. The protein Caesar dressing is my favorite part. I can’t get enough of it!
